Departures from Oaxaca open up a genuinely distinctive catering option, given the region’s standing as a gastronomic destination in its own right. Elsewhere the range depends on what the local handler can source, and we would rather tell you what is realistic from a specific airport than promise a menu that cannot be delivered there.
Lead Time and the Departure Airport
Catering is ordered through the handler at the departure field, and the smaller the airport the longer the notice needed. At the main gateways a day is usually enough; at a regional field it is not. Dietary requirements, allergies and children’s meals should all go in at booking.
Galley Limits by Aircraft
What the aircraft can actually serve is set by its galley. A light jet has cold service and limited storage; a heavy jet or airliner-size aircraft with a cabin attendant can serve a hot multi-course meal. Matching the catering ambition to the aircraft is part of the recommendation, not a separate conversation.
Vetting Behind Every Trip
Every operator, aircraft, and crew goes through our internal due diligence before we present any options. Our internal standards meet or exceed what the FAA requires:
- FAR Part 135 charter operators for traditional private aircraft, or FAR Part 121 for airliner-size and group trips (or the foreign equivalent on international legs)

- Pilot experience and operator incident history reviewed before we recommend an aircraft.

Mexico Patterns We Plan Around
Two things shape almost every Mexico charter regardless of the reason for the trip. The first is lead time. Landing and customs permits are applied for after a trip has been secured on the aircraft schedule, and the timeline is sometimes set by the local airport authorities, so the earlier you book, the more room we have to work with. The second is elevation. Toluca, the main Mexico City private jet gateway, sits at 8,460 feet, and on a warm afternoon its density altitude can pass 11,000 feet, which changes what an aircraft can lift.
